A cucumber stick wrap with vinegared rice in a sheet of dried seaweed.
Called "Kappa" roll in Japanese as Kappa the Yokai monster is believed to like cucumbers. It is often eaten to refresh palates. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
